Mint Chocolate Avocado Ice Cream

Mint Chocolate Avocado Ice Cream?? Yes please! This ice cream is so creamy, so delicious, naturally colored, and you would never know there is avocado in it!

Avocados seriously wear all the hats! Great on tacos, great in smoothies, great in salads, great on toast (check out all the ways to enjoy avocado toast here), and now…great in ice cream.

If you have ever used avocados in your smoothie you know that they make smoothies very creamy and do not add much flavor. In ice cream, they do the same! Plus, it’s green which makes it the perfect coloring agent for a classic ice cream flavor, mint chocolate ice cream.

All you need is a blender and a few ingredients to make this vegan avocado ice cream. You don’t even need an ice cream maker!

Ingredients for Mint Chocolate Avocado Ice Cream

This vegan avocado ice cream is packed with nutrient dense ingredients. Avocado and all their best friends combine to make this not only tasty ice cream, but healthy ice cream!

  • Avocado: This is the star of the show! Avocados are packed with healthy fats and have a neutral taste making them a great ice cream base and helping this to be healthy avocado ice cream.
  • Coconut Milk: Not all coconut milks are created equal. For ice cream, I recommend using full fat canned coconut milk to ensure a creamy ice cream. Coconut milk that is packaged in a box is typically primarily water content meaning your ice cream will be more sorbet like than ice cream like.
  • Sugar: I used white cane sugar to make this the most creamy, sweet treat! For a low carb avocado ice cream, feel free to use a sugar-substitute.
  • Banana: A banana a day keeps the doctor away. Is that how that goes? Maybe not, but here the banana is a nutritious addition to the ice cream that also adds sweetness. I recommend using a ripe banana for maximum sweetness.
  • Mint Leaves: I used fresh mint leaves to get the mint flavor for this ice cream. Fresh is best!
  • Dark Chocolate: Dark chocolate is the best – no question. I love to use a super rich dark chocolate.

Coconut Milk tip

When using canned coconut milk, you will find that the liquid has sunk to the bottom and the fat has risen to the top. Usually these will just mix together, but sometimes the coconut may have gone bad or been processed in a way that inhibits the coconut milk to mix back together again leading to grainy baked goods or ice cream. To pick a can that will mix well, I always hold the can in the palm of my hand and give it a shake. If I can feel a thick liquid begin to form as I shake, then it is a good coconut milk, if it feels like I am shaking a water bottle even after some shaking, then the coconut milk will not mix well and may have even begun to go bad.

How to make Avocado Nice Cream

This easy avocado ice cream is well, really easy! The sugar gets dissolved, then everything goes in a blender, then in a bread tin, then in the freezer. That’s it! No ice cream maker needed and no heating a mixture on the stove.

Step 1: Dissolve Sugar
Combine 1 can of coconut and the sugar in a microwave-safe bowl. Microwave for about 60 seconds, or until warm. Stir to dissolve sugar.

Step 2: Blend
Add mixture to a blender, along with all other ingredients except chocolate. Blend until smooth, then stir in chopped chocolate.

Step 3: Freeze
Pour into a large 9×13 inch casserole dish. Place plastic wrap directly on the mixture, pushing out any air bubbles that may be on the surface. Freeze until solid.

Step 4: Serve
Remove from freezer about 30 minutes before serving. It make be brown on top, which you can scrape off to expose the bright green ice cream underneath!

Recipe Tips and FAQs

Storage: It is super important to store this ice cream with the plastic wrapped pressed onto the top. This helps to keep ice crystals from forming and prevent freezer burn.

Substitutions: For the chocolate, feel free to use any chocolate you like for this ice cream or use chocolate chips, either will work great!

What does avocado ice cream taste like? Avocado is an incredibly neutral flavor so avocado ice cream is very neutral. That’s why we flavor it and why it takes on flavor so well!

Is avocado ice cream fattening? All things in moderation, but the fat in this is monounsaturated, as opposed to normal ice cream which is saturated, so it’s a healthier type of fat.

Is avocado an ice cream flavor? Sure! If you love love love avocado and that is the flavor you want you can certainly have an avocado flavored ice cream. Just don’t forget to add the mint or chocolate and let the subtle avocado flavor shine.

Recipe Variations

This ice cream is great so many different ways. If you love the original, I totally recommend trying one of these delicious variations!

  • Chocolate Avocado Ice Cream: Add 1/4th of a cup of cocoa powder to the blender mixture. You can keep the mint leaves in for an extra chocolatey mint chocolate ice cream or leave the mint leaves out for chocolate avocado ice cream.
  • Strawberry Avocado Ice Cream: Try adding a handful of strawberries to the blender and leaving out the mint leaves. This makes an awesome strawberry ice cream!
  • Key Lime Avocado Ice Cream: Key lime is the flavor of summer! I love replacing mint and chocolate chips in this recipe with the juice from 2 key limes to make key lime ice cream. It goes great with the coconut milk!
  • Keto Avocado Ice Cream: To make this ice cream keto, simply leave out the banana and use a no-calorie sugar replacement. Easy peasy!

Ingredients

  • 2 15-oz cans full-fat coconut milk 425 g each
  • ¼ cup sugar 50 g
  • 2 ripe avocados
  • 1 ripe banana
  • ¼ cup mint leaves 20 g
  • ½ cup roughly chopped dark chocolate about 4 oz, 113 g
