With precisely 487 days of rain in Holland this year, the tulip-man and I have been caving and ordering takeout more than I care to admit. Because when the weather is crummy and you’re not feeling sunshiney, sometimes you just need some good old fashioned comfort food.

But the thing is, you can make some seriously delicious vegetarian comfort food at home pretty easily! Whether it’s winter or summer, I’ve rounded up a few of my favorite cozy comfort food recipes for us all to get a bit of meatless inspiration from – including everything from vegetable-packed casseroles to pizzas to curry. Enjoy!
