If I could only eat one cuisine for the rest of my life, Italian would be the obvious choice. Because while it’s packed with all the best foods (like pasta, pizza, and risotto), it’s also a relatively healthy diet filled with whole grains, healthy fats, and delicious produce.

Inspired by many trips taken to Italy, I’m sharing 17 of my all-time favorite vegetarian Italian recipes. They include everything from the classics (like vegetable pizza) to my healthier takes on the classics (like zucchini pasta with pesto). Enjoy!
